One Pot Turkey Spaghetti Bolognese

One pot wonder for a hearty, easy meal and only one dish to clean. Ground turkey to keep the calories down but lots of flavor to keep your taste buds happy!
Servings 12 servings

Ingredients
  

  • 2 tbsp olive oil
  • 2 carrots diced
  • 1 onion diced
  • 1 celery rib diced
  • 2 cloves garlic minced
  • 1/4 cup tomato paste
  • 1 lb ground turkey
  • 2 tsp Italian seasoning
  • 2 14.5 oz cans diced tomatoes with juice
  • 1 lb spaghetti or fettuccine or linguini
  • 3 cup water
  • 1/2 cup shredded parmesan can use more for serving
  • 1/4 cup fresh Italian parsley chopped, can use more for serving
  • dash salt and pepper to taste
  • dash crushed red pepper optional

Instructions
 

  • Heat the olive oil in a dutch oven over medium-high heat. Toss in the carrots, onion and celery and cook until softened. Add the garlic and cook for a minute more, until fragrant.
  • Add in the tomato paste and stir, add the ground turkey and cook until browned.
  • Add in the diced tomatoes, Italian seasoning, some salt and pepper, pasta, and 3 cups of water.
  • Mix it all together and as the noodles become a bit softer, you can get them all covered in the water.
  • Once you have it all stirred together and noodles are covered in water, bring it to a boil and cook until pasta is al dente or however you like your pasta. It is important to keep stirring it frequently to make sure the pasta doesn't stick. The sauce will also thicken up a bit during this time.
  • Stir in the parmesan and chopped parsley and add any additional salt and/or pepper if needed.
  • Sprinkle with a little more parmesan for the cheese lovers out there and add some more parsley if you want to be fancy.

This one pot turkey Spaghetti Bolognese recipe is a fast and easy recipe that tastes like it simmered all day with your grandma hovering over it. It is rich and flavorful but a little healthier due to the ground turkey instead of beef. There are lots of modifications that I have used before like adding cream cheese to the sauce or adding a can of cream of mushroom soup. I have added some zucchini and used different cheeses like an Italian cheese blend. It never disappoints.
