One pot wonder for a hearty, easy meal and only one dish to clean. Ground turkey to keep the calories down but lots of flavor to keep your taste buds happy!

Ingredients
2tbspolive oil
2carrotsdiced
1oniondiced
1celery ribdiced
2clovesgarlicminced
1/4cuptomato paste
1lbground turkey
2tspItalian seasoning
214.5 oz cansdiced tomatoeswith juice
1lbspaghettior fettuccine or linguini
3cupwater
1/2 cupshredded parmesancan use more for serving
1/4cupfresh Italian parsleychopped, can use more for serving
dashsalt and pepper to taste
dashcrushed red pepperoptional
Instructions
Heat the olive oil in a dutch oven over medium-high heat. Toss in the carrots, onion and celery and cook until softened. Add the garlic and cook for a minute more, until fragrant.
Add in the tomato paste and stir, add the ground turkey and cook until browned.
Add in the diced tomatoes, Italian seasoning, some salt and pepper, pasta, and 3 cups of water.
Mix it all together and as the noodles become a bit softer, you can get them all covered in the water.
Once you have it all stirred together and noodles are covered in water, bring it to a boil and cook until pasta is al dente or however you like your pasta. It is important to keep stirring it frequently to make sure the pasta doesn't stick. The sauce will also thicken up a bit during this time.
Stir in the parmesan and chopped parsley and add any additional salt and/or pepper if needed.
Sprinkle with a little more parmesan for the cheese lovers out there and add some more parsley if you want to be fancy.
